Green onions are a great salad addition as they add a little bit of flavor without that overwhelming onion taste. When you’re crunched for time, creating a fancy salad is hard. I like to use this small addition to keep me from feeling left out off a more interesting take-out lunch.
If you’re like me, your busy work schedule only allows for grocery shopping once a week. With a little bit of preparation after grocery shopping, you can easily keep your green onions fresh.
After a few experiments, here are my favorite tips for storing green onions so they stay fresh for at least a week.

Tips for storing green onions in your refrigerator
When you come home from grocery shopping, take a few minutes to clean and prepare your green onions for storage. With a few simple steps you can keep them fresh for at least a week. There have been a few weeks where my green onions were still fresh and crunchy at the beginning of the next week.
1. Start by cleaning your green onions well.
Pull back any damaged outer onion layers. You should be able to feel any layers that are flimsy or damaged. It’s usually only the top layer that you need to remove.
Next rinse your green onions well. Make sure to wash away any green onion slime (yuck!) and sand. The slime has a weird feeling and is easily removed with water. The roots may have some sand stuck to them so rinsing is an important step.
And by pre-rinsing them, you’re green onions will be ready to use during the week.
2. Trim the tops so they’ll fit in a rectangular glass container.
My favorite way to store green onions is in a large rectangular glass container laying down. It holds in the cold and moisture really well. I originally tried using plastic storage bags, but found after a few days the green onions started to wilt. Also, if you’re trying to reduce your plastic usage, glass works out better. Glass is a win to prevent wilting and a win to reduce disposable plastic.
Trim the green tops so your green onions lay flat in the glass container. Since you weren’t going to eat that far into the ends, it’s not a loss.
3. Wrap the roots in very wet (but not dripping) layers of paper towels.
Green onions need moisture to stay fresh. Wet a few paper towels so that there’s a lot of water, but not fully dripping.
Wrap the root ends of the green onions in wet paper towels. Combined with the covered glass container, you should have fresh green onions for your work week.
